Südtiroler Stuben, EssenHere, a new generation of restauranteurs took on a long-established restaurant on the Baldeneysee which had been mainly frequented by an elderly clientele: A balancing act between tradition and a taste of the future. The concept that was required needed to reinterpret the key features of an Alpine theme – ‘warm, woody and cosy’. The lake attracted summer guests, however the off-peak winter season needed to be bridged by converting the bar area. A new light concept, new materials, cosy benches with a patchwork look, an improvement to the entrance area and a lowering of the window rails were only some of the measures that were carried out.
